PETER RASHKIN’S SCRAMBLED EGGS from THE LOST FAMILY

We are delighted to present Peter’s scrambled eggs from page 277 of The Lost Family: the recipe chef Peter Rashkin and his daughter Elsbeth, calling themselves The Fabulous Rashkins, cook together every Saturday morning Peter is not at his restaurant. This recipe serves four.

Ingredients

½ c butter
6 large eggs
½ c heavy cream
4 shallots or 1 medium onion (preferably Vidalia), chopped
8 oz cubed pre-cooked ham
½ bunch fresh dill, chopped
4 oz Neufchâtel cheese
Salt & pepper to taste


Preparation

Melt the butter in heavy non-reactive saucepan over low heat.

Add chopped shallots/ onion (shallots will give a slightly sweeter taste) & caramelize, continuing to keep heat very low, until translucent, about 10 minutes.

While shallots are caramelizing, whisk eggs and heavy cream to a frothy mixture.

Once shallots are translucent, add egg mixture and cubed ham to pan.

Cook eggs, stirring gently with wooden spoon, to preferred texture (we prefer fluffy).

Add fresh dill; stir to combine thoroughly.

Right before serving, drop 1 oz Neufchâtel cheese onto each portion.

Serve while hot.
